The beginning…

2020 has been a great year for our farm. When the lockdown was beginning in North Carolina, we began our calving and milking season, which also began our first season of making cheese. The pandemic gave us a distraction free environment to hunker down and focus on the artistic science of the craft. It has been all immersive, exciting, difficult and incredibly humbling. As I learn more and more each day, I realize how little I know. Cheese, like so many other things we take for granted, holds a complexity in its very existence I can barely grasp. Cheese tells a story of a place and a history of the culture from which it has evolved. It speaks to the beauty and grace of the animals and human beings connection to those animals and the natural world.

Cheese tells a long and meandering story from long ago to today. I hope this space can be a place where I can share the revelations and the tribulations that arise each day from the pasture to the make room to the cave.
